Strawberry Surprise Cupcakes

These are a total treat for the kiddos that we do once a year the week of Valentines Day. It’s fun to show how a little more work before putting the cupcakes in the oven makes for a fun surprise when they bite into the finished product!
Ingredients
  • For the cake
  • • 1 ¼ cups all-purpose flour
  • • ¼ cup whole wheat flour
  • • 1 ½ teaspoons baking powder
  • • ½ teaspoon salt
  • • 1 cup sugar
  • • 1 stick butter, room temperature
  • • 2 large eggs, room temperature
  • • ½ cup 2% milk, room temperature
  • • 1 teaspoon pure vanilla extract
  • • 1/3 cup strawberry jam
  • For the Frosting:
  • • 2 cups confectioner’s sugar
  • • ½ cup unsweetened cocoa powder
  • • 1 stick unsalted butter, room temperature
  • • ½ cup heavy cream
  • Plus one pint strawberries, cut in half for serving.
Instructions
  1. For the Cake:
  2. Preheat the oven to 350 degrees. Line a 12-cup muffin pan with paper liners. Set aside.
  3. In a large bowl, mix the flours, baking powder, and salt. Set aside.
  4. In a separate large bowl, beat the sugar and butter with electric hand mixer until smooth. Add the eggs, milk and vanilla. Beat until smooth.
  5. Add the dry ingredients and mix until just blended.
  6. Spoon batter half way into muffin cups (about 2 tablespoons of batter in each cup).
  7. Spoon 1 teaspoon of the strawberry jam into the center of the batter.
  8. Spoon more batter on top of jam until jam is completely covered.
  9. Bake 15-17 minutes, until puffed and the cake springs back when touched.
  10. Remove cupcakes from oven and transfer to a wire rack and cool completely (about 30 minutes).
  11. For the Frosting:
  12. In medium bowl, sift the confectioners’ sugar and cocoa powder.
  13. Add softened butter and cream.
  14. Beat with a mixer on medium-high speed until smooth.
  15. Decorate frosting to cupcakes tops and add strawberry half to top of frosted cupcake.
