Serves: 4-6
Ingredients
  • For the Salad:
  • 2-3 hearts romaine lettuce, cut into 1-inch strips
  • 1 cucumber, cut in half lengthwise and cut into ½ inch chunks
  • 3 large tomatoes, cored and cut into ½ inch chunks
  • ½ cup pitted kalamata olives, coarsely chopped
  • ¼ cup crumbled Feta cheese
  • For the Dressing:
  • ¼ cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 lemon, juiced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Pepper to taste
Instructions
  1. For the Salad:
  2. Place the cut lettuce in a large bowl.
  3. Scatter the cucumbers, tomatoes, olives and feta over top.
  4. For the Dressing:
  5. Combine all ingredients in a re-sealable container (such as a ball jar).
  6. Shake vigorously!
  7. OR…
  8. Place all ingredients in a bowl except the olive oil.
  9. Whisk well to combine.
  10. Slowly add olive oil in a thin stream, whisking constantly until thickened.
