| Three Bean Pineapple Salad |

Black Bean, White Bean, Black Eyed Pea and Pineapple Salad
Ingredients
- ¼ cup orange juice
- 2 tablespoons red wine vinegar
- ¾ tablespoon ground cumin
- 1 teaspoon Dijon mustard
- ½ cup extra virgin olive oil
- Salt, to taste
- Pepper, to taste
- Other Ingredients
- ¼ each pineapple, small dice
- ½ red pepper, small dice
- ½ each red onions, thinly sliced
- ½ can white beans, rinsed
- ½ can black eyed peas, rinsed
- 1 can black beans, rinsed
- ½ bunch, cilantro, roughly chopped
Instructions
- Combine orange juice, red wine vinegar, ground cumin, Dijon mustard, salt and pepper in a large bowl. Whisk. While whisking, slowly add olive oil until well combined. Set aside
- In a large bowl, combine diced pineapple, red peppers, onions, carrots, white beans, black eyed peas, black beans and cilantro. Add vinaigrette. Blend well. Adjust seasonings.
