Black Bean, White Bean, Black Eyed Pea and Pineapple Salad
Ingredients
  • ¼ cup orange juice
  • 2 tablespoons red wine vinegar
  • ¾ tablespoon ground cumin
  • 1 teaspoon Dijon mustard
  • ½ cup extra virgin olive oil
  • Salt, to taste
  • Pepper, to taste
  • Other Ingredients
  • ¼ each pineapple, small dice
  • ½ red pepper, small dice
  • ½ each red onions, thinly sliced
  • ½ can white beans, rinsed
  • ½ can black eyed peas, rinsed
  • 1 can black beans, rinsed
  • ½ bunch, cilantro, roughly chopped
Instructions
  1. Combine orange juice, red wine vinegar, ground cumin, Dijon mustard, salt and pepper in a large bowl. Whisk. While whisking, slowly add olive oil until well combined. Set aside
  2. In a large bowl, combine diced pineapple, red peppers, onions, carrots, white beans, black eyed peas, black beans and cilantro. Add vinaigrette. Blend well. Adjust seasonings.
