Spaghetti and Turkey Meatballs

Ingredients
 1 lb whole wheat spaghetti
 ½ cup grated Parmesan cheese
For the meatballs
 2 lbs lean ground turkey
 6 cloves garlic
 ½ onion, finely grated
 ¼ tsp salt
 ½ tsp pepper
 ¼ tsp oregano
 1 egg, beaten
 ½ cup whole wheat bread crumbs
For the sauce
 3 tbsp olive oil
 ½ onion, finely chopped
 10 cloves garlic, finely sliced
 56 oz crushed tomatoes, no salt added (2 cans)
 ¼ tsp salt
Method

Preheat oven to 400 degrees.
Make the sauce:
Finely chop onion; slice garlic.
Heat 3 tablespoons olive oil in a large sauce pan, or Dutch oven, over medium heat. Add onion and ¼ teaspoon salt. Cook until onion is softened and just beginning to brown (5-7 minutes).
Add garlic and cook until golden, about 2 minutes more.
Add tomatoes and their juices; bring to a boil. Reduce heat to medium low and simmer. Cook until sauce is slightly thickened, about 20 minutes.
While sauce cooks, make the meatballs:
Mix all the meatball ingredients together in a large bowl. Equally divide meat mixture into 24 portions and roll into balls.
Place meatballs on a parchment lined baking sheet. Bake in oven for about 15 minutes. Then add meatballs to the sauce pot, cook covered for about 5 minutes (internal temperature must reach 165 degrees).
While the meatballs simmer, cook the pasta according to package directions.
Equally divide pasta into 8 bowls.
Top each pasta bowl with 3 meatballs each.
Equally divide remaining tomato sauce into bowls.
Top with 1 tablespoon of Parmesan cheese per bowl.
