Pantry Minestrone

Ingredients
 1 Small Onion
 4 Cloves Garlic
 1 tbsp Olive Oil
 2 Cans Diced Tomatoes
 4 cups Vegetable Stock
 2 Cans Cannellini beans, drained & rinsed
 2 cups Whole Wheat Rotini
 ½ tsp Dried Basil
 1 tsp Oregano
Method

1. Heat oil in large pot over medium-high heat.
2. Add diced onion, cooking until browned, about 3 minutes.
3. Add minced garlic and cook 30 seconds more. Add more garlic if desired based on taste preference.
4. Add canned tomatoes and their juices. Cook for 2 minutes.
5. Add stock, drained/rinsed beans, pasta, basil and oregano. Simmer for 10 minutes, until pasta is tender. Add salt and pepper to taste.
