Vegetable Lo Mein

Ingredients
 10 oz lo mein noodles, cooked according to the package
 2 tbsp olive oil
 4 cloves garlic, minced
 ½ bunch of scallions, both white and green parts, thinly sliced
 1 red bell pepper, thinly sliced
 1 green bell pepper, thinly sliced
 4 carrots, peeled and shredded
 1 cup snow peas, rough chopped
 6 cups baby spinach
 1 can baby corn, drained and chopped
For the sauce:
 3 tbsp soy sauce, low sodium
 1 tbsp sesame oil
 1 tbsp fresh ginger, grated
 ½ tsp sriracha
Method

In a small bowl, whisk together all sauce ingredients. Set aside.

Mince garlic; slice scallions and peppers; peel and grate carrots. Place in medium bowl.

Chop snow peas and place in a large bowl with the spinach.

Chop baby corn. Place in small bowl.

Fill large pot with water, place on stove and bring to a boil over high heat. Cook noodles according to package directions.

While water boils: Heat olive oil in a large skillet over medium high heat. Add garlic, scallions, peppers and carrot. Cook, stirring frequently, until tender, about 3-4 minutes.

Stir in snow peas and spinach until the spinach has wilted, about 2-3 minutes.

Stir in baby corn, cooked noodles and sauce mixture. Gently toss to combine.

Serve immediately. Enjoy!
