Vegetarian Brazilian Black Bean Stew

Ingredients
 2 tbsp olive oil
 1 yellow onion, diced
 1 green bell pepper, diced
 2 small sweet potatoes, peeled and diced (or about 1 lb)
 3 cloves of garlic, minced
 1 tbsp ground cumin
 2 tsp ground coriander
 2 tsp smoked paprika
 ½ tsp salt
 ½ tsp ground black pepper
 ¼ tsp red pepper flakes
 ½ cup orange juice
 2 15 oz. cans diced tomatoes
 2 cups veggie stock, low sodium
 3 15 oz. cans black beans, rinsed and drained
 2 mangos, peeled, seeded, diced
 ½ cup cilantro, rough chop
 2 limes, juiced
Method
1

Dice onion and bell pepper, place in medium bowl.

Dice sweet potato and mince garlic. Place in small bowl.

Measure all spices and place in small spice bowl.

Dice mango, chop cilantro, squeeze juice from two limes. Set aside in medium bowl.

Heat olive oil in a large pot over medium heat.

Add the onion and bell pepper, cook until softened, about 5 minutes.

Add sweet potatoes, garlic, and all spices, cook 1 minute longer.

Add orange juice, turn heat to high and reduce by three-fourths.

Add diced tomatoes, black beans and vegetable stock. Bring to a boil, reduce to a simmer.

Cook 15 minutes, until sweet potatoes are tender.

Stir in the mango, cilantro and lime juice.
