Creamy Parmesan Kale Salad

Ingredients
 1 bunch lacinato kale, washed
For the dressing:
 ½ cup parmesan cheese, grated
 2 lemons
 2 cloves of garlic, minced
 ½ tsp salt
 ½ tsp ground black pepper
 ¼ cup olive oil
Method

De-stem kale and tear into bite size pieces and place in a medium mixing bowl.

Place lemons on the counter. Press down on each lemon with the palm of your hand and roll the lemons back and forth several times to help release juices.

Zest 1 lemon; shred parmesan cheese; mince garlic.

Cut 2 lemons in half and squeeze out juice over mesh strainer to catch any seeds.

Add ½ cup parmesan cheese, zest of 1 lemon, lemon juice of 2 lemons, 2 cloves garlic, ½ teaspoon salt, and ½ teaspoon pepper to the food processor bowl. Process until smooth.

While food processor is running, add ¼ cup olive oil in a steady stream.

Massage dressing into the kale.
