Ingredients
 1 bunch of kale, deveined and cut into chiffonade
For the dressing:
 2 tbsp olive oil
 1 lemon, zested then juiced
 ½ tsp salt
 ¼ tsp pepper
Method

In a small bowl, whisk together lemon juice, lemon zest, olive oil, salt, and pepper.

Wash, devein, and chiffonade kale. To chiffonade: stack several leaves then roll tightly. Slice the roll thinly so that thin ribbons of the leaves form.

Toss kale with dressing to coat thoroughly.
