Preheat oven to 375.
Line a baking sheet with parchment paper or foil and place a wire rack on top. Place sausage patties evenly spaced on the rack and bake for 20-25 minutes or until cooked through (165 degrees). (If sausage is purchased in a roll and not pre-formed patties, divide 16 ounce roll into 8 portions and shape into patties before baking.)
While the sausage cooks, make the sriracha spread. Mix together ¼ cup may and ¼ cup sriracha in a small bowl. Set aside.
While sausage continues to cook, spray a 12-inch skillet with non-stick cooking spray and heat over medium-low heat.
Crack eggs carefully into a bowl so you can check for pieces of egg shell, then pour all eggs gently into the heated pan. Cook until egg white is set. Using your spatula cut around eggs to divide each egg. Flip with a spatula and cook until yolk is cooked through.
Assemble sandwiches: Open English muffin, place 1 slice of cheese, 1 egg, 1 sausage patty and 1 slice of tomato on bottom half of muffin. Spread 2 teaspoons of sriracha spread on top half and close sandwich.
