Wash and dry produce.
Prep ingredients: grate zucchini; peel and grate carrots; small dice onion, bell pepper and mushrooms; mince garlic. Place all in a large bowl.
Measure spices and place in a small bowl.
Add 1 tablespoon oil to a large pot and heat over medium heat.
Add all vegetables and sauté for 5 minutes.
Add spices and cook for 1 minute more.
Add in crushed and diced tomatoes. Bring to a boil and then reduce heat to a simmer. Continue to simmer for 15-20 minutes.
Serve over whole wheat pasta.
Option: You can add 1 pound of cooked lean beef if you would like. Brown in the same pot prior to adding vegetables!
