Jerk Chicken Thighs

 1 ½ lbs boneless, skinless chicken thighs
For the jerk marinade:
 ½ bunch of scallions, roughly chopped
 2 large garlic cloves, roughly chopped
 ½ jalapeno
 ½ of a lime, freshly juiced
 4 ½ tsp olive oil
 3 ½ tsp soy sauce, low sodium
 1 ½ tsp packed brown sugar
 1 ¼ tsp ground all spice
 ½ chopped fresh thyme leaves
 ¼ tsp ground cinnamon
 ¼ tsp ground nutmeg
 ¼ tsp salt
 ¼ tsp pepper

Preheat grill to medium-high heat.


Place the lemon and lime on the table. Press down on each piece of fruit with the palm of your hand. Roll the fruit back and forth on the table to make juicing easier.


Place all jerk marinade ingredients in a food processor. Blend until smooth.


Place chicken in a gallon size Ziploc bag.


Pour the marinade into the bag and gently massage to coat. Set aside.


Grill chicken: Spray the grates with non-stick cooking spray. Place chicken on grill and grill until cooked through and the jerk marinade has blackened and caramelized in spots, turning halfway through (internal temperature of 165 degrees).
