Make-Your-Own Omelette

 2 eggs
 1 pinch salt
 1 pinch pepper
 Cooking spray
Topping options:
 Cooked turkey bacon pieces
 Roasted onion
 Roasted bell pepper
 Roasted mushrooms
 Wilted spinach
 Diced fresh tomatoes
 Shredded reduced-fat cheddar cheese

Prepare toppings: dice & roast veggies; shred cheese; cook bacon following package instructions.


Crack eggs into a bowl.


Add salt and pepper, blending with a fork.


Heat a 10-inch non-stick pan over medium-high heat. Spray with non-stick cooking spray.


Pour eggs into center of pan. Using a rubber spatula or tilting the pan, move egg mixture around until the excess liquid touches each part of the pan. Let omelette sit in pan for 10 seconds without touching.


Shake pan to loosen the omelette.


Add toppings and cook for 30-60 more seconds until the omelette firms a little.


Using your spatula, fold omelette in half.
