
Cook quinoa according to package directions.
Smash cannellini beans using the back of a fork or potato masher.
Crack and whisk egg.
Mince garlic.
Combine ingredients: mix together cooked quinoa, smashed beans, panko, egg, garlic, chili powder, salt, pepper and shredded cheddar cheese. Form into 6 patties.
Heat 1 tablespoon olive oil in a large sauté pan over medium heat. Add burger patties and cook on each side for about 5 minutes – until heated through and crispy on the outside. Top each patty with 1 tablespoon gruyere cheese, cover with lid, cook additional 1-2 minutes until cheese begins to melt.
Make the sauce: mix all ingredients in a small bowl.
Assemble burgers: add one burger to each bun, add optional toppings as desired. Top with spicy ketchup or your favorite sauce.
