Ingredients
 1 cup whole wheat bread crumbs
 ½ tsp ground black pepper
 ¼ tsp cayenne pepper
 1 tsp chili powder
 1 tsp dried thyme
 ½ onion, small dice
 1 carrot, peeled and grated
 3 cloves of garlic, minced
 ½ red bell pepper, small dice
 2 lbs lean ground beef
 1 egg
For the glaze:
 ¾ cup ketchup, no salt added
 2 tsp ground cumin
 ¾ tsp Worcestershire sauce
 ¾ tsp hot pepper sauce
 4 tsp honey
Method

Preheat oven to 400 degrees F.

Prep ingredients:
a. Dice onion, carrot and bell pepper into a small dice; mince garlic.
b. Crack egg into small bowl, removing any shells; whisk with fork.

Combine all meatloaf ingredients in a large bowl. Mix until combined.

Divide mixture in half and shape both portions into logs. Place on a parchment lined baking sheet.

Bake for about 10 minutes

Combine the catsup, cumin, Worcestershire sauce, hot pepper sauce and honey. Brush the glaze onto the meatloaf after it has been cooking for about 10 minutes.

Bake for about 10-15 more minutes until a thermometer reads 160 when inserted to the center of the loaf.
